Getting back into routine with life.....& cooking

As I knew I would I be, I am shockingly bad with keeping up to date posting on this blog. I'm not surprised in the slightest though. I like to cook....not to write. I thought I better check in however seeing as I've made pretty big changes to my daily routine which have led to a drastic change in my cooking and eating habits. Hopefully all for the better.

So what's changed? I've gone and got myself a new job. Hallelujah! A full time, big girl job. Finally! When I came home from South Africa I told myself I will not settle with just any job. I'll be turning 27 this year. I wanted/needed something for me with stimulation and that I know I'll be happy to leave my cloud bed for in the morning. I was stubborn now. I was unemployed for a horrible amount of time (I do not recommend it for your mental well-being btw). I'm a firm believer of the saying "good things come to those who wait" now. I was nearly giving up hope but here we are, three weeks into the new job, loving life! Doing something I've always wanted to do, working with animals. I'm a sucker for routine too, and love set days/hours. This is the dream for me because (of course thinking of my stomach) I can now properly plan my weekly meals accordingly. I know when I do and when I don't have time for extravagant cooking fiascoes like I used to so the blog and Instagram will be taking a minor hit but sure look, I'll still be posting. I love food too much to let work come between us. I've even incorporated my cooking already into work. I made a small Chocolate Brownie Cake with a White Chocolate Disc to celebrate our successful first week open at the Veterinary Practice. Wasn't my finest work but I think it did the job. I was more impressed with my piping skills this time more so than other times.

Routine has always been my friend. Especially for the hips and thighs. I just find it so much easier to plan ahead on what I'm eating which is always way better than deciding last minute. Plus I'm eating something I actually want and haven't just half arsed cooked something quick for the sake of it cause I'm so hungry. Food prep is essential when you're working full time. (I sound like my coach back when I was in Slimming World) It works though, well at least it does for me. I either cook the night before the next day for lunch or dinner or I plan an express meal to be cooked for example Stir Fry or Spaghetti with Prawns. Quick and easy but so satisfying and filling. Fish is always a fast food wonder when you want to cook something quick but that is actually good for you and most importantly, tastes fecking good. At the end of the day, yeah I wanna be healthy, but I more so want what goes in my mouth to taste good! I feel like I'm back in school too trying to sort out my lunches. Dangerously, I work beside a lovely little cafe called Tigernut which does really good bagels. Cheese...Bread... Life's temptresses and who are certainly not my friend. Except for Goat's Cheese. You'll always be my friend. However, meal prep is your best friend. I like to make big filling dishes like Shepherd's Pie or Lasagne the night before. Then all you have to do when you come in from work is cook a few veggies or toss a wee salad together, bang in the oven or microwave and boom. You're laughing and satisfied!

This week I'm going try really hard to up the fruit and veg in all my meals. One of the easiest ways to do that I find is making a massive pot of soup. This week I've made some chunky veg Minestrone soup. My all time favourite soups are Tomato & Basil, Tomato & Roasted Red Pepper but the above all champion is Potato & Leek soup. Need to have that one in moderation though. Not exactly the healthiest option when made with luscious cream. You can make a non-cream alternative but let's not lie to ourselves and say it's just as "nice". It's not now....nor ever will be. When I was in Slimming World "it's a just as nice" was always the saying when anyone cooked a low fat version of their favourite dish. To be fair, some of their recipes were amazing but the likes of making Chinese Chicken Curry or Fish & Chips I'm like now now, you're having a laugh.....but who are we kidding? Certainly not ourselves...maybe you're fooling the group. They don't see your face when you're eating the "healthier" versions in the comfort of your own home. I'd rather order the Chinese and just be extra careful on other days when using my 'syns'.....sometimes....

So yeah, I'm definitely a big fan of routine. Here's hoping it works out the way that I think it will in my head. Routine with my food will help me get my weight down to a healthy one but also keep my skin, hair and nails healthy. Life is good when your feeling and eating good, I'll try post of some recipes soon of some of my favourite packed lunches for work anyways for anyone who is interested. Until next time! Happy Eating!
