This is the Coffee & Walnut Cake Birthday Cake I made for my mum who celebrated her 55th Birthday this week. I bought Button moulds to make the chocolate buttons and I couldnt be happier with how they turned out! Epic stuff! Deadly for someone like my mum who is into quirky buttons with her clothes etc. She loved it!
Lean Meatballs

Not going to be modest in the slightest......I make pretty darn sexy meatballs served with my roast red pepper & tomato sauce! My meatballs are a combination of Irish Mince Beef, chopped fresh garlic, chilli & red onion, grated courgette, salt, pepper & balsamic vinegar. You can dunk the meatballs in the sauce or you can baked the meatballs in the sauce with grated cheese on top served with pasta or salad!
Three Cheese & Roasted Vegetable Lasagne

Cheese......Please..... Going Veggie with tonight's dinner.... A 3 Cheese & Roasted Vegetable Lasagne. The veggies are in my roasted red pepper sauce & the layers are divided with my hubba hubba....spinach and cheese sauce....Ohhhh talk dirty... I love this...I've no shame... Would probably eat the whole Lasagne itself (which serves ALOT we shall just say)
Irish Smoked Salmon Frittata

I judge people who don't eat eggs.....they're glorious little things which you can use to cook in a variety of different ways. One of my favourite ways to use eggs is making Frittata...No rules really as to what goes in to my frittatas just whatever I see suitable in my fridge or stacked in my veggies! Today's breakfast for example is an Organic Irish Smoked Salmon Frittata with spring onion and spinach. A good way to start one's day!
Wild Garlic Pesto

I'm mad for a good walk with my mutts. Every time I look at the Wild Garlic growing in Glen of The Downs I think to myself I have to try and make some pesto. Well after all my mouthing I've finally done it and I'm quite surprised. I decided to use Rapeseed Oil rather than Olive Oil too because I love the taste of great quality Irish Rapeseed oil and it worked out wonderfully. Now all I have to do is find some crunchy bread and sure we're laughing.
